Vanilla Sprinkle Blondies

These are the bars for a little celebration that does not need a whole cake. Vanilla and white chocolate make the base, with rainbow sprinkles folded through the batter and scattered lightly over the top.

One pan, no frosting

Use an 8-inch square metal pan and line it with parchment handles. The finished slab lifts out for slicing, so you can make tidy squares without trying to cut around the corners of the pan.

Choose the right sprinkles

The formula specifies bake-stable jimmies. Keep the tiny nonpareils and large hard decorations for another use until their behavior has been tested here. Measure 45 g in total, then divide that into 30 g for the batter and 15 g for the surface.

Mix gently after the flour goes in

The butter and sugars can be whisked, but switch to a spatula once you add the flour. Fold in the white chocolate and sprinkles at the end. The batter is intended to be thick enough to spread into the corners rather than pour like cake batter.

How to check the middle

Look for set, lightly golden edges and a center that no longer appears liquid. If a toothpick hits melted white chocolate, move to another spot. A chewy bar still needs a baked center; wet batter is not the goal.

The cooling time is part of the recipe

Allow about 90 minutes before slicing. Cutting warm bars makes it difficult to tell whether the center has set and tends to drag the white chocolate through the crumb. Give the pan its time on the rack, then use the parchment to lift out the slab.

For a specific occasion, the sprinkle colors can change while the type and total weight stay the same. Keep a note of the brand used during testing so the final recipe and photographs match.

Ingredients

  • 113 g (1/2 cup) unsalted butter, melted and cooled until warm
  • 160 g (about 3/4 cup packed) light brown sugar
  • 50 g (1/4 cup) granulated sugar
  • 1 large egg plus 1 large egg yolk, at room temperature
  • 2 teaspoons vanilla extract
  • 150 g (1 1/4 cups) all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon fine salt
  • 85 g (about 1/2 cup) white chocolate chips
  • 45 g (about 1/4 cup) bake-stable rainbow jimmies, divided: 30 g for the batter and 15 g for the top

Instructions

  1. Heat a conventional oven to 350°F (175°C), with the rack in the center. Lightly grease an 8-inch square metal pan and line it with parchment handles.
  2. In a mixing bowl, whisk the melted, cooled butter with the brown sugar and granulated sugar until evenly combined. Whisk in the egg, extra yolk and vanilla until the mixture looks smooth.
  3. Whisk the flour, baking powder and salt in a separate small bowl. Fold them into the butter mixture just until a few flour streaks remain. Fold in the white chocolate chips and 30 g of the sprinkles until no dry flour remains.
  4. Spread the thick batter evenly in the pan, including the corners. Scatter the remaining 15 g sprinkles over the top and press them in very lightly.
  5. Bake for 24–30 minutes, checking at 24 minutes. The edges should be set and lightly golden, and the center should no longer look glossy or liquid. A toothpick away from a white chocolate chip should have moist crumbs rather than raw batter.
  6. Cool completely in the pan on a rack, allowing about 90 minutes. Lift out using the parchment and cut in a 4-by-4 grid for 16 squares. The bars must cool before you can assess whether the center has set properly.

Sprinkles: Use bake-stable rainbow jimmies for the first test, not tiny nonpareils that may bleed or large hard decorations. Sprinkle weights vary by brand; use the gram measurement.

Pan: This formula is written for an 8-inch square metal pan. A 9-inch pan makes thinner bars and requires a separate timing check.

Doneness: Melted white chocolate can leave a smear on the toothpick. Check a second spot away from a chip, and do not mistake liquid batter for a chewy center.

Storage plan: Cool completely, then store airtight at cool room temperature and plan to use within 3 days during quality testing. Freeze well-wrapped cooled bars for up to 2 months as a quality target to confirm.
