A tray of chocolate brownies is a good place to start a Halloween treat table. Give each square a little vanilla ghost and the decorating is done. No fondant, no intricate faces, just a piping bag and a few dots of chocolate.

A little chocolate, a little boo

The brownie base uses both melted semisweet chocolate and cocoa. The goal is a rich, fudgy square sturdy enough to hold a small buttercream ghost. Keep the topping modest so the chocolate stays the main event.

Before you start

Use an 8-inch square metal pan. Line it with parchment handles so you can lift the cooled slab out before slicing. The butter listed twice is intentional: one portion goes into the brownies and the other becomes the ghosts.

Allow a full cooling window. Decorating warm brownies will soften the buttercream, so this is an easy project to divide into a baking session and a later decorating session.

How to pipe the ghosts

You do not need a fancy star tip. Use a round opening about 1/2 inch wide. Hold the bag upright, squeeze a little mound, then stop squeezing as you lift. The small point at the top gives the ghost its shape. Use melted chocolate on a toothpick for the eyes.

A few things worth knowing

A dry toothpick is not the target for these brownies. Look for set edges and moist crumbs without liquid batter. Let the slab cool before deciding how the final texture has turned out.

For cleaner squares, an extra 20-minute chill after cooling is optional. Wipe the knife between slices rather than dragging frosting or crumbs from one brownie to the next.

Make it a baking afternoon

Adults handle the oven and melted chocolate. Children can help choose a serving plate or add the cooled chocolate eyes with supervision. Keep raw batter off the tasting menu.

Keep for later

Ingredients

  • 113 g (1/2 cup) unsalted butter, for the brownies
  • 115 g (4 oz) semisweet baking chocolate, chopped, for the brownies
  • 200 g (1 cup) granulated sugar
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract, for the brownies
  • 65 g (about 1/2 cup plus 2 teaspoons) all-purpose flour
  • 25 g (about 1/4 cup) unsweetened natural cocoa powder
  • 1/2 teaspoon fine salt, for the brownies
  • 113 g (1/2 cup) unsalted butter, softened but not greasy, for the ghosts
  • 240 g (about 2 cups plus 2 tablespoons) powdered sugar, sifted after measuring
  • 1 teaspoon vanilla extract, for the ghosts
  • 1–2 tablespoons whole milk, added only as needed
  • 1 small pinch fine salt, for the ghosts
  • 20 g (about 3/4 oz) semisweet chocolate, melted and slightly cooled, for the eyes

Instructions

  1. Heat a conventional oven to 350°F (175°C) with a rack in the center. Lightly grease an 8-inch square metal pan and line it with parchment, leaving overhang on two sides.
  2. Combine the 113 g brownie butter and 115 g chopped chocolate in a microwave-safe bowl. Heat in 20-second bursts, stirring after each, just until smooth. Let stand for 5 minutes so it is warm, not hot.
  3. In a separate bowl, whisk the granulated sugar, eggs and 1 teaspoon vanilla for about 1 minute. Whisk in the warm melted chocolate mixture until evenly combined.
  4. Sift the flour and cocoa over the batter, add the 1/2 teaspoon salt and fold gently with a spatula until no dry pockets remain. Scrape into the prepared pan and smooth the surface.
  5. Bake for 25–30 minutes, checking at 25 minutes. The edges should be set; a toothpick near the center should have moist crumbs but no liquid batter. Continue baking in short increments if wet batter remains.
  6. Cool completely in the pan on a rack, allowing about 2 hours. Lift out with the parchment and cut into 16 squares. Clean the knife between cuts. Do not frost warm brownies.
  7. Beat the 113 g softened frosting butter for 2 minutes. Add the powdered sugar, remaining 1 teaspoon vanilla, pinch of salt and 1 tablespoon milk. Mix on low until combined, then beat on medium for about 2 minutes. Add more milk a teaspoon at a time only if the frosting is too stiff to pipe.
  8. Transfer the buttercream to a piping bag with a 1/2-inch round opening. Hold it upright over each brownie, pipe a squat mound and release pressure as you lift to make a little peak.
  9. Use a toothpick to dot two small eyes onto each ghost with the melted chocolate. Allow about 15 minutes for the eyes to set, then refrigerate the decorated brownies in a covered container until serving.

Pan and yield: Use an 8-inch square metal pan for this development batch. A 9-inch pan changes the depth and bake time. Cut a 4-by-4 grid for 16 brownies.

Texture: This formula is intended to be fudgy rather than cakey. Judge doneness by set edges and moist crumbs, not by a completely dry toothpick. Do not leave liquid batter in the center.

Make ahead: Bake the slab first and decorate only after it has cooled. The 2-hour cooling allowance is included in total time; an optional extra 20-minute chill for tidy slicing is not.

Storage plan: Refrigerate the decorated brownies promptly in a covered container at 40°F (4°C) or below and plan to serve within 3 days. Let a portion soften briefly before serving; limit time out of refrigeration to 2 hours, or 1 hour above 90°F (32°C). Freeze undecorated, well-wrapped brownies for up to 2 months as a quality target to confirm.
