This is a finishing recipe for already-baked madeleines, not a claim that the little shell cakes were made from scratch. Trader Joe’s Madeleines are one option, with any plain purchased madeleine as a substitute. Dipping only one end keeps the shell shape visible and leaves a clean place to hold the cake.

A few things that make the difference

Leave the shell shape visible. A full coating hides the madeleine’s character and makes it difficult to handle. Dip only one end and let excess chocolate drain. A thin coating is also easier to bite through than a heavy shell.

Dry tools and modest zest. Water droplets can affect melted chocolate, so wash and dry the grater and bowls before starting. Scatter zest on the surface rather than stirring a wet spoonful into the chocolate. A little fragrance is enough for these small cakes.

Ingredients

  • 12 plain fully baked madeleines, about 250–300 g total
  • 150 g (about 5 1/4 ounces) semisweet chocolate, finely chopped
  • 1 teaspoon refined coconut oil, optional
  • 1 teaspoon finely grated orange zest, patted dry
  • 30 g (about 1/4 cup) shelled unsalted pistachios, finely chopped
  • Pinch flaky sea salt, optional

Instructions

  1. Unwrap madeleines and inspect them for freshness. Line a tray with parchment and set out finely chopped pistachios and dried surface orange zest.
  2. Melt chocolate with optional coconut oil in short microwave bursts, stirring frequently. Stop when nearly melted and stir until smooth. Keep all utensils dry.
  3. Let chocolate cool briefly until fluid but not hot enough to soften the cakes. Hold a madeleine by its plain end and dip the opposite end into chocolate, coating about one-third of the cake.
  4. Lift and let excess chocolate drip back into the bowl. Place on parchment with the shell ridges visible rather than pressing the dipped surface flat.
  5. Before chocolate sets, scatter a few pistachio pieces and a little orange zest over the dipped end. Add an optional tiny pinch of flaky salt. Repeat with all cakes.
  6. Refrigerate 15–20 minutes just until chocolate is firm, then transfer to a covered container. Keep cool; the chocolate is melted, not professionally tempered.
  7. Serve the same day if possible.
